Taco Time and a Few Musings On Life

A healthy "taco" option :)

2  cans tuna in water
1/2 small avacado
2 tbsp homemade salsa
2 tbsp Greek yogurt
3 Ezekiel tortillas
Garlic, salt, pepper

Lots of protein, and lots of deliciousness!

On a side note: a family member of mine died on Tuesday by being hit by a train. Death is always horrible but to be gone so suddenly is so scary. It really has had me thinking a lot this week. I already get tired of hearing people complain about their lives for a few reasons: 1) Things could always be worse. My boyfriend is always quick to point that out when people complain...he knows what it's like to really be in pain and have a life altering situation happen to you. If you think you have it bad, take a look at the person next to you. Your problems might not seem so big. 2) If you're not happy, I think it's your responsibility to do something about it instead of spending your time complaining and wallowing in self pity. This family death has me thinking about these things even more. You never know when you're going to be taken from this earth, and you don't get a second chance. Might as well buck up and make this life your best, since you only get one and all.

Have a great Friday and a fantastic weekend! I did a ton of cooking this week so there will be plenty of new recipes starting Sunday :)
