Quinoa Sweet Potato Chickpea Veggie Burgers


Meat burgers, turkey burgers, veggie burgers...they all have different tastes but are all delicious in their own way. I found this recipe on Ambitious Kitchen and HAD to try it. I had a can of chickpeas waiting in the pantry, just longing to be used.....I had planned on using them for the Vegan chickpea cookie dough recipe I had found but this burger recipe was screaming my name last night so I used them up! Again, you can get the original recipe here. I altered it to make it work for me :) These turned out DELICIOUS...seriously so yummy. The spicy yogurt sauce just makes the burger.

I don't really eat bread at all so I put mine on a bed of lettuce. However, eat like a regular burger on a bun, sandwhich thin, in between two donuts if you like :)

Quinoa Sweet Potato Chickpea Veggie Burgers With Spicy Yogurt Sauce
1 teaspoon olive oil
3 cloves of garlic, minced
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
freshly ground black pepper
1 medium to large sweet potato
1 -15 oz can chickpeas, rinsed and drained
2 1/2 cups cooked quinoa
3 egg whites
olive oil, canola oil, or cooking spray for frying

For spiced yogurt sauce:
2 teaspoons Tabasco sauce or your favorite hot sauce
1/2 teaspoon dijon mustard
1 cup plain nonfat greek yogurt
1 teaspoon honey or agave nectar
1/4 teaspoon salt

Instructions
  1. Poke sweet potato several times with a fork and place in microwave for about 3-4 minutes or until it is soft and cooked thoroughly. Do not overcook or the sweet potato will harden.
  2. Place beans, cooked sweet potato, chopped garlic, salt, cumin, and chili powder and pulse until slightly chunky but smooth. Add mixture to bowl and combine with cooked quinoa and egg whites. Season with salt and pepper again to taste and adjust seasonings as desired. Divide into patties and place on parchment paper on a baking sheet or large plate; refrigerate for 30 minutes to help bind together.
  3. Heat skillet again over medium-high heat. Spray pan with canola or olive oil cooking spray. Serve with buns of your choice and desired toppings.
  4. To make yogurt sauce: In medium bowl combine yogurt, honey, dijon mustard, and hot sauce until smooth.
