Energy balls (or amazeballs!) are probably one of my favorite things to make. They are a perfect pick-me-up in the morning, and they're so delish they basically taste like dessert. I altered this recipe from FitFoodieFinds, one of my favorite bloggers. Enjoy :)
Mocha Balls Ingredients
-1C quick cooking oats
-1/2C all natural peanut butter
-1/2C agave nectar
-2t instant coffee grounds
-handful of cacao nibs
1. In a small food processor, process oats for 15-20 seconds, turning your oats in to oat flour.
2. Add the peanut butter, honey, and instant coffee and process for about a minute, or until it becomes doughy. (You may need to add a squirt more of agave nectar (or even water) if it is still too dry.) Toss in the cacao nibs and mix with a spoon.
4. Scoop out the dough and role between your palms, forming a ball. To make sure they turn out smooth, wet your hands before rolling. Set balls on a foil lined tray and put in refrigerator to cool and harden.
