Dessert Time

LOVE DESSERTS. Some people are "meat and potatoes" people, some are wanting sweets all the time....and that's definitely me. Here are two recipes I've made over the last few days so I don't feel guilty when I "indulge". Also, both recipes include peanut butter, chocolate, and bananas...coincidence?

Banana Bites
1-2 bananas, cut into bite sized pieces
1 spoonful peanut butter
1/3 cup dark chocolate chips (I used ghiradelli 60% cacao chocolate chips)

Microwave the PB and chocolate together for about a minute, stirring every 20 seconds. Put the banana pieces on foil or in a container. Pour the mixture over the banana pieces. Cover and put in freezer. Best after frozen for about 6 hours (the frozen banana tastes and has the texture of vanilla ice cream!)




Chocolate Chip Protein Cookies
4 cups oats
2 scoops vanilla protein powder
1 large extra ripe banana
1/2 cup organic dark chocolate chips
1 large egg
2 egg whites
2 tbsp brown sugar packed
2 tbsp Stevia
1 tsp baking soda
3 tsp baking powder
1 tsp vanilla







Preheat oven to 350 degrees. 
In a large mixing bowl add all ingredients. 
Mix together until a cookie dough texture forms. If your batter is too runny, add more oats; too thick, more egg whites. 
Drop two tbsp sized batter scoops onto a non-stick baking sheet two inches apart. 
Bake 10-12 minutes. 


These protein cookies are a perfect late night treat, or even right before or after a workout.
